Mushroom stock for Risotto

Mushroom power

60g dried Shiitake mushrooms
1500ml of water
  1. Boil the water, pour over the mushrooms and leave to soak for 10 minutes.
  2. Strain off the liquid.
  3. Use the mushroom power in f. e.g. Justin's mushroom risotto or store in an airtight container in the fridge for up to 14 days.
  4. Save the dehydrated mushrooms to make pickled mushrooms!
